Ingredients

For chocolate macaroons:

  1. 250 ml (1 cup) almond powder

  2. 330 ml (1 1/3 cup) icing sugar

  3. 30 ml (2 tablespoons) cocoa

  4. 3 egg whites at room temperature

  5. 2.5 ml (1/2 teaspoon) lemon juice

  6. 1/2 cup (125 mL) sugar


For the chocolate ganache:

  1. 125 ml (1/2 cup) 35% cooking cream

  2. 100 g (3 1/2 oz) dark chocolate 70% cut into pieces

  3. 15 ml (1 tablespoon) butter

Salted Caramel macarons:

  1. 250 ml (1 cup) almond powder

  2. 330 ml (1 1/3 cup) icing sugar

  3. 3 egg whites at room temperature

  4. 2.5 ml (1/2 teaspoon) lemon juice

  5. 1/2 cup (125 mL) sugar


For caramel icing:

  1. 45 ml (3 tablespoons) of water

  2. 180 ml (3/4 cup) sugar

  3. 1/4 cup (60 mL) 35% cooking cream

  4. 125 ml (1/2 cup) salted butter
