Ingredients
For chocolate macaroons:
250 ml (1 cup) almond powder
330 ml (1 1/3 cup) icing sugar
30 ml (2 tablespoons) cocoa
3 egg whites at room temperature
2.5 ml (1/2 teaspoon) lemon juice
1/2 cup (125 mL) sugar
For the chocolate ganache:
125 ml (1/2 cup) 35% cooking cream
100 g (3 1/2 oz) dark chocolate 70% cut into pieces
15 ml (1 tablespoon) butter
Salted Caramel macarons:
250 ml (1 cup) almond powder
330 ml (1 1/3 cup) icing sugar
3 egg whites at room temperature
2.5 ml (1/2 teaspoon) lemon juice
1/2 cup (125 mL) sugar
For caramel icing:
45 ml (3 tablespoons) of water
180 ml (3/4 cup) sugar
1/4 cup (60 mL) 35% cooking cream
125 ml (1/2 cup) salted butter
